How to create a Tax Organizer in ProConnect that looks like the full fledged one in Lacerte? (i.e. last year's numbers as comparison)?

I'm guessing you can't.  I don't use that product but I recall seeing a number of past posts complaining about the organizers coming out of that product.  If you want an organizer that looks like a Lacerte product, I think you have to stick with the Lacerte product.
