How do I enter "Gross amount from sales assets other than inventory" and the related cost basis in a form 990 part VIII line 7a? There is no drilldown from "check return"

When in doubt, think of the character of the underlying transaction.
Since this is a disposition, you should enter that under Revenue > Dispositions > Dispositions (Schedule D, 4797, etc.).
