Question

Can you have both husband and wife accept the engagement letter electronically? It appears only 1 email address can be used in Intuit Link.

No, you can't.  Access to Intuit Link is limited to only one email address, as you suspected.  Personally, I am not a fan of this function in Intuit Link because it is not really robust enough for EL and it lacks the metadata you'd normally expect for electronic signature.
