When in forms view, can I set up the software to have a default view of the whole page?

I don't believe you can. Once set for a client, it will hold until you closed that client. Have you looked at split view? https://proconnect.intuit.com/support/en-us/help-article/partnership/using-split-pop-views-lacerte/L7u2wdUYN_US_en_US?uid=lchwnexx
