What do you put in as the address for a gift tax return when the Donee lives overseas?

You can't. One of the drawback with Intuit's tax products is that the developers don't feel it necessary to cater to foreign addresses in certain critical areas.
You will have to live with those critical diagnostics and edit the PDF outside of Lacerte to complete the foreign address on the statement.
