Does anyone know how to set up a single-member LLC registered in Delaware but doing business in California for an individual?

Set-up as in register?  sos.ca.gov.

In Lacerte, enter the info in Screen 16, 18, or 19 as appropriate.  Under "sections" on left side go down to other info, find the box to check for Single Member LLC.

Screen 1, click on Ca LLC for efiling.

Screen 54, left hand side, third one down is Ca SMLLC.

    Thanks for your information, I already set up for California, just no idea how to set up for Delaware too.

    Which isn't really what you asked.   

    Sorry - you'll have to handle Delaware all by yourself.
