How do I change the email address for one of my users?

You need to call Support. It's iterative and very annoying, there are a lot of fields in the Intuit ecosystem for them to update (e.g. DocuSign integration is separate). Before you call, take note of all the places you see/know of it being used/logged.

Be very patient and very gracious. The reps really don't know all the places to look until you give them examples of what you see that's still not changed.

If you aren't in dire need for 4/15, wait until a week after 4/15 to call. Everyone will be breathing easier and have better headspace for this then.
