Settings > Options > Display - click on the items then the Up or Down to arrange what you want. Then click OK

You can rearrange on the clients screen to modify, but that is temporary - e.g. drag client name into first column, or Due Date, Or ... and click on the top of the 1st column to change Ascending or Descending.
